Sambal 三佰 brings playful, inventive fusion to the streets of George Town, blending Nyonya and Teochew influences into dishes that surprise and delight. The menu features standout plates like the Udang Entangled — glass noodles in a rich Shaoxing-infused broth — and imaginative salads that pair green mango, beetroot, and toasted coconut with house dressings for a bright, textural bite. Drinks are part of the experience too: distinctive beverages such as a bunga kantan refresher add aromatic contrast, while the bar program serves approachable cocktails and well-crafted mocktails that complement the cuisine.

Service is frequently called out for being warm, knowledgeable, and genuinely helpful; staff members like Chris are noted for guiding guests through the menu and recommending dishes that turn first-time visitors into repeat patrons. The kitchen’s fusion approach results in plates that balance texture and flavor — grilled squid with stuffed pork and garlic aioli, Nyonya-style salads, and rich, wine-tinged noodle soups all showcase creativity rooted in regional tradition. Casual yet thoughtful plating, consistent seasoning, and an approachable price point make Sambal ideal for exploratory dinners or relaxed lunches.

Food was all right but overpriced. Ordered 3 dishes & 1 Coke Zero $165. Service is good, attentive & friendly. Seating area is small, not that comfortable seats. All the blending & making of cocktails can be really loud as the floor is cement.

Delicious local fusion food and cocktails. Went down for a visit to the main restaurant after our visit to their Tapas bar (Belachan Tapas Lab) the night before. We were greeted with nice appetisers and cocktails. Definitely get the cocktails (Chilli padi in the background with a nice tamarind base, no pic). The drunken clams (kind compliments of the owner) and udang entangled were executed with perfection. Clams were succulent and its sweetness was highlighted by the fragrant garlic and herbs along with the shao xing wine. Similarly, for the Udang entangled (claypot vermicelli with prawns), shao xing wine was the star without being overpowering, very warming broth that coated the vermicelli noodles!! Must get these 2 dishes if you are a fan of fish head bee hoon soup. The staff were friendly and attentive. They replace side plates and refilled our glasses promptly. Will be back for more!! Tip: do remember to make a reservation to skip the queue.

Fabulous food, superb service!!! Will return! Full house even on a weekday. Limited seating. The noodles were awesome, think of fish head noodles, but amp it waaaaay up, and no fish but prawn. Very good! Ribs was tender, juicy, falls of the bone.
